Wild Theobroma bicolor (Jaguar cacao) is one of the rarest species of the Theobroma genus alongside the more well-known Theobroma cacao (common cacao). It is said that outside of cultivated and farmed trees (macambo), there are still a few thousand hidden wild-growing trees in the tropical jungle. Since prehistoric times, Jaguar cacao has been used for food and ritual purposes.

Nutritional value: Each Jaguar cacao bean contains 31% specific fibre, 25% pure protein, stable saturated cacao fats but also anti-inflammatory omega-9 fatty acids. Jaguar cacao is full of serotonin compounds that enhance mood and affect cognitive functions - which also gives it the nickname "Brain Bean" (it also looks like a brain - not a coincidence).

Wild Jaguar cacao is extremely unusual and rare. Unfortunately, it is becoming extinct as its trees are rapidly disappearing from their natural habitat in Central America. The tree is rarely seen even in areas where it is still valued and has a rich history. Apart from cultivated analogues, most of the original trees now exist more as relics or grow wild in nature.

Jaguar Tree Cacao by Naive is sweetened with organic raw cane sugar in the amount of 18g for the entire bar (equivalent to the amount of natural sugar in about one apple).

This range introduces Naive's original approach to crafting ultra-rare chocolate, inviting curious gourmets and cacao lovers to explore new shapes, parts, and layers of the entire cacao fruit, tasting chocolate in a new way. By using rare white heirloom and wild jaguar cacao for this limited collection, Domantas Užpalis appealed to the most discerning palates.

The antioxidant composition of Jaguar cacao is naturally different from regular dark (sometimes even purple and heavily pigmented) T. cacao due to its light colour. It contains only half the same types of cacao antioxidants but 1000 times more of the lesser-known flavonoid called myricetin. It also has significantly higher levels of various other phenolic acids.

This special dark 70% chocolate is, like all high-quality high-percentage bars, very rich in stable fat energy, specific fibre, proteins, minerals, and antioxidants. The nutritional composition and fat/carbohydrate/protein content, specific and unique to each brand and type due to the origin of the beans and processing, reveal and anticipate interesting differences.

The pods emit a strong aroma one to two weeks after falling from the tree. The scent is particularly aromatic in the evening. As the pods dry, their surface begins to resemble the pattern on a jaguar's skin.
Each pod contains an average of 30-50 beans wrapped in juicy yellow slime. Unlike T. cacao, mature Jaguar cacao beans do not contain significant amounts of alkaloids like caffeine, so its taste is not bitter at all. The initial taste resembles fresh almonds or macadamia nuts and slightly unripe avocado, followed by notes of toasted bread with a hint of spicy, smoky, and chocolate tones a few seconds later. The aftertaste is multi-layered and long, lasting up to 5 minutes. The profile is of high quality with very little bitterness or astringency.

Breaking a piece of this chocolate reveals aromas of herbs and hay, cacao, leather, and smoke with a spicy finish. Placing a piece in the mouth, the chocolate soon achieves a caramel-like consistency, syrupy and full, dense. It starts with notes of foam bananas with a hint of papaya and candied oranges, leading to spicy tones of paprika. Jaguar beans taste most similar to macadamia nuts and almost resemble a 'buttery biscuit', giving the bar a touch of perfect chocolate biscuit. Chocolate and spice complement each other well, and the bar is well-balanced. It is a chocolate for gourmets who enjoy flavour combinations or seek something unusual in their chocolate. It is especially for those who want to try an ultra-rare treat.
