A rare, exceptionally scarce Mexican dark chocolate made from "white" heirloom cacao (original heritage/ancient varieties) with white cacao nibs (crushed beans). The white cacao comes from Finca La Rioja, a small farm in Cacahoatán in Chiapas, Mexico. Cacahoatán, also known as the "place of cacao" in the ancient Toltec language, is a historically important center of early chocolate making. When the Spanish landed in 1522, Chiapas was the center of the cacao trade in Central America, and the very first cacao brought to the Spanish royal courts in Europe came from here. Through personal expeditions, Domantas Užpalis obtained a limited quantity of extremely rare white Mexican cacao from this region for his precious Theobromaz collection and invites the most discerning connoisseurs to explore and taste it.
This distinctive 67% chocolate contains no refined white sugar, emulsifier or any other unnecessary additives. Like all high-quality chocolate, it is rich in energy from stable cacao fats—in this case also sugars from forest honey and cane juice—as well as amino acids and enzymes from pollen, specific fiber, protein, minerals, antioxidants and theobromine. The nutritional composition and proportions of fat/carbohydrates/protein, which are specific and distinctive to each brand and type of chocolate because of the beans' origin and processing, reveal and suggest interesting differences.

Exceptionally rare Mexican dark chocolate made from "white" heirloom cacao
A blend of heritage heirloom cacao varieties is grown on the small source farm, including pentagona, lagarta and some ancient criollo types. The complete annual harvest of these old varieties is only approximately 70–140 kg (depending on the particular year) and, under ideal conditions, is almost entirely reserved for Domantas's Naive. This goes hand in hand with his unconventional approach to sourcing distinctive ingredients in small quantities, directly and locally. The beans are fermented in wooden boxes for five days. They are turned three times a day and then dried on wood in the sun. The absence of purple pigments and darkness in the seeds indicates the beans' particular heritage and ancient genetics and accounts for the pale, light color of the chocolate.

Premium cacao beans are carefully selected from exceptional farms. They are then transported along old sea routes to Europe and finally to Lithuania, the home of Chocolate Naive.
